There are 2 types of antioxidants but people only recognise 1.
ANTIOXIDANT TYPE 1
According to the Better Health Channel, Antioxidants are compounds in foods that neutralise chemicals called free radicals (unstable molecules), produced by oxidation in the human body. These chemicals have been linked to diseases such as heart and liver disease and cancer. Plant foods such as fruits, vegetables, nuts and wholegrains are rich sources of antioxidants.
A diet high in antioxidants may reduce the risk of many diseases, including heart disease and certain cancers. Antioxidants scavenge free radicals from the body cells, and prevent or reduce the damage caused by oxidation.
Plant foods are rich sources of antioxidants. They are most abundant in fruits and vegetables, as well as other foods including nuts, wholegrains and some meats, poultry and fish.
The other type of Antioxidants are unknown to people

People don’t recognise that the liquid from fresh food contains antioxidant type 2. So when you dry your food, the second type of antioxidant will not be present any longer. e.g. dried fruits/pasta
FoodieGuru observes that those who are lacking in antioxidants have bodies that quickly consumes or use up the antioxidants. It is best to eat smaller amounts of antioxidants but regularly throughout the day every 2-3 hours instead of having 1 big hit a day to maintain our body immune systems.
